Since a few years the Red American Swamp Crayfish makes the Berlin waters & parks unsafe. In the meantime, it has developed with several other invasive species into a full-grown plague that feels right at home here and makes the ecosystem unsafe. But why simply kill what connoisseurs consider a delicacy, thought three Berliners. Lukas and Jule Bosch and Andreas Michelus recognized the potential and founded Holycrab! The idea: to put animals that are considered a nuisance on our plates. What is perceived as a problem for nature conservation could be valuable elsewhere, explains Lukas Bosch. The concept was awarded the Gastro-Gründerpreis in 2019.
